The vegetable knife is similar to the paring knife in that it's a smaller knife. But instead of the curved edge that's typical of a paring knife, the Kershaw Vegetable Knife has a flat edge. This makes it perfect for use against the cutting board since it makes full contact with the board on each stroke. That makes it easy to do all those smaller tasks that are part of preparing vegetables— trimming green beans or herbs, or mincing garlic, for instance.
The downturned tip keeps the pointy away from you and makes cutting just a bit safer. The Kershaw Vegetable Knife is part of the Kershaw 9900 Series of kitchen cutlery. While you can put these knives in the dishwasher, we recommend handwashing to maintain your knives—and keep the knives from harming anything else in your dishwasher.
